Ingredients:
1 cup cooked brown rice
1 cup broccoli florets (fresh or frozen)
1/2 cup kimchi (fermented, not pasteurized)
1 block (14 oz) firm tofu, pressed and cubed
1 tbsp sesame oil (or avocado oil for cooking)
1 tbsp low-sodium soy sauce or tamari
1 tsp rice vinegar
1 tsp honey or maple syrup (optional)
1/2 tsp garlic powder or 1 clove fresh garlic, minced
Toasted sesame seeds and green onions for garnish (optional)
Instructions:
Prep tofu: Cut pressed tofu into bite-sized cubes. Pat dry.
Cook tofu: In a non-stick skillet over medium heat, add sesame oil. Sauté tofu cubes until golden brown on all sides (about 10–12 minutes). Drizzle with soy sauce, rice vinegar, and garlic powder during last 2–3 minutes of cooking.
Steam broccoli: While tofu cooks, steam or microwave broccoli until just tender (about 4–5 minutes). Don’t overcook—it should stay vibrant and a little crisp.
Assemble bowls: In each bowl, layer:
1/2 cup cooked brown rice
Half of the sautéed tofu
1/2 cup steamed broccoli
1/4 cup kimchi
Drizzle & garnish: Add a little extra sesame oil or a spoonful of kimchi juice for flavor. Garnish with sesame seeds and green onions.
